Police officers uncovered an underground factory of the local fine food, known as “Century eggs” It looks… Yummy! Duck eggs are mainly used to prepare this dish. It is made by preserving duck eggs in a mixture of clay, ash, salt, lime, and rice hulls for several weeks to several months, depending on the method of processing. Through the process, the yolk becomes a dark green, cream-like substance with a strong odor of sulphur and ammonia, while the white becomes a dark brown, transparent jelly with little flavor. Century eggs can be eaten without further preparation, on their own or as a side dish.
